No I haven’t. Rice paste stands amazingly in moderate and humid weather. It’s much stronger than gum paste in that type of conditions. It becomes more fragile in extreme dryness like in super strong aircon in dry mode.

Hi, I did your rice paste recipe, left it very well wrapped resting in the fridge for over 24hr. The consistency is so dry. I kneaded it with crisco but It is not as smoothy as yours.

I explained that the texture of the paste may depend on: how dry your place is, the quality and origin of the flours/starch you use. So, if u find it too dry, you can add 5-10gr of hot boiling water to the flour mixture at the stage of mixing it. Be careful about the glutinous rice flour too: it must be pure! As only pure glutinous rice flour has maximum amount of amilopectin, the material that helps it have the special pliability that can be turned into flower paste!

I purchased a rice flour called “Dried Sweet Glutinous Rice Flour (Traditional Water Milled)” from Amazon since that was the only one that was available online. However when I looked at the ingredient label it doesn’t say that it has Amilopectin in it. Is it supposed to say that he has this certain ingredient in it?
Hi Yary,
As long as it’s pure glutinous rice flour,it will be nothing different to the paste I used during the lessons ( u need to take the weather& cooking time into account too).
Amylopectin is a component of the starch inside the flour so it’s not necessarily included on the label guide.

Yes, glutinous rice flour has 100% amilopectin in it so it’s very pliable. Regular rice flour doesn’t have that special characteristics, it can be made into a paste too but it’s so tricky and the texture is not as good as glutinous rice paste

Yes mashed potato can be used instead of potato starch but the paste will turn so dull, not as white as the original recipe. The flowers will be more fragile using it too. So I recommend potato starch, the recipe is the best so far after a lot of experiments.

How long can you store completed flowers? Can you make flowers months in advance and then store in tightly sealed plastic containers?
Sure you can! How long it can be stored depends on your own conditions; but in the same conditions as sugar flowers, rice paste flowers stay better.
Have you worked with the Maggie Austin gumpaste recipe? Love it but the flowers are so fragile!! How does the rice paste compare?

Rice paste can be stored in freezer for months. In a fridge, it stays fresh for use in 3-4 days.
