Class Overview
World-renowned cake artist & instructor, Jessica MV has been working with home-made gum paste for years using Nicholas Lodge’s recipe because it stands humidity the best compared to many commercial brands. However, she has to work in extreme conditions for gum paste such as strong air-conditioned or dehumidified space due to super humid spring & very long hot &humid summer but very dry fall & winter days in her city. And she finds that gum paste, either home-made or commercial always becomes dry very fast while she’s still working on it under those typical conditions regardless how quick she is. Also, the flowers made out of home-made gum paste look a bit dull compared to the ones using commercial paste
Jessica has modified the recipe by Nicholas Lodge to make it so much more comfortable to work with under the same conditions. And interestingly, it creates such pure looking flowers. Pastel flowers like the peonies & dahlias that she will teach in this course don’t really need dusting to be lifelike & looking soft as high quality commercial paste.
In this course, Jessica will share with you all the steps in making this beautiful gum paste as well as tons of techniques in making two forever-in-trend flowers: peony & dahlia with buds & leaves.

Hi Karin,
It is gum paste so it’s affected by moisture. As far as I know, all edible flower mediums are more or less are affected by humidity.
To preserve the flower, I just do the same as for other gum paste flowers.
1. Let them dry completely.
2. Put them in a closed box.
3. Put them in permanently dry room, which means a room with changes from dry to humid & vice versa is not good for all sugar flowers.

I want to buy the gum paste course, but there are so many models and classes. What are the difference?
Hi there,
The gum paste courses are devised into modules & bundles.
Modules are individual classes: module 1 is a sculpture art wedding cake design, module 2 is a texture wedding cake design; module 3 is 2 types of flowers & buds in pastel colors (peony & dahlia), module 4 is ombré flowers ( peony & rose) using blended gum paste.
The bundles are simply grouping individual modules of the same topic at better prices: flower bundle combines module 3 + 4 ( so there are 4 Flowers); texture bundle combines module 1&2( 2 cakes). The recipe & methods of making gum paste are taught in all classes either modules or bundles.
These courses are designed to suit learners’ demands. So you may choose according you your own needs.
