Class Overview
World-renowned cake artist & instructor, Jessica MV will introduce a modified method of making gum paste that she has developed from the famous recipe by Nicholas Lodge. There will be some adaptation in the process of making with the same ingredients to make the paste purer, translucent, slower in drying even in super dry working room or weather.
It also has some other advantages that you may want to try. As sugar flower makers, we all may experience the fact that though our hands, tools & working counter are completely clean, while we work with gum paste, the paste will catch a lot of fibers & dust that sometimes we don’t know where they are from & this puts us in quite a lot of stress. Now with this adapted version of home-made gum paste, you will feel much more comfortable as the paste will behave so much better & you can become unafraid of not being quick enough before the paste gets dry & becomes useless.
The modified gum paste Jessica makes also blends very well and you can create ombre colors without complex painting or dusting techniques.
Jessica will show you how to make the paste & all the steps in making a pure peony with four bud styles & leaves, a dahlia with buds & leaves to create a romantic collection then cover two exotic flowers in ombre colors achieved by blending the paste; rose and peony that have glowing effect.

If you pay via OnePay, our domestic gateway, it’s highly possible that your bank may not recognise the gateway if everything else you filled in in the process of payment is correct.

Hi Jess! How long can you keep the modified gum paste in the refrigerator? Freezer?

For months in the fridge but I recommend covering it in damp towel all the time.
I don’t like the idea of preserving it in freezer because it will be hardened & become a hard work to knead it.
If you have a permanent room temperature, just keep it zip-locked at a cool place without exposing to humidity or extreme dryness, then it can stay fresh for months.

Hi Jess, will the modified gumpaste work in extreme humid conditions like in Malaysia? I have used Renshaw with added tylo and full air con and the flowers were still quite soft after 12 hours. Thanks.

The gum paste I modified is basically Nic Lodge’s recipe which is famous for being the best in standing humidity. From my own experience,it stands humidity better than many commercial brands.

Hi jess, I wonder if you can help me please, I did 2 batches of modified paste 1 work beautifully, but the other stayed crumbled and wouldn’t knead to a smooth paste, is there something I’m doing wrong as I used the same methods x

I guess it might be because of the tylose powder. Can you tell me which type/brand do you use? The recipe I use is basically Nic Lodge’s wellknown one & it never fails. The adaptation is the amount of shortening & how to blend it into the paste & it doesn’t affect the pliability of the paste.
But 1 more thing is it might be crumbly first after resting & all you need to do is kneading well to make it pliable, which I mentioned in the course.

If 1 batch is good but hte other goes wrong, perhaps you may add wrong amount(s) of ingredients. Sometimes I’m absent minded or thinking about something else while working on the paste & the same thing happens.

Hi jess, the tylose is the confectionery arts one, that worked, but I made a batch with pure fine tylose so it could be that, the confectionery arts one recommended is hard to get in the UK, so I’ve ordered a quite a few pots, so I don’t run out x thankyou for your advice, I suppose if you have to use a different brand it’s a case of learn from your mistakes, I’ll be using the recommended tylose from now. I can actually start watching and making my flowers now x
